Apulia's towns are Bari, Brindisi, Foggia, Lecce, and Taranto. Farm products are here olives, grapes, cereals, almonds, figs, and livestock (sheep, pigs, cattle, and goats). The Pugliese tradition of food and wine includes antipasti, which are here raised to a prominent rank, mussels, squid and octopus.
On your gourmet tour to Apulia, your tour guide will introduce you to the following culinary specialties and recipes, and to the following wines and liqueurs:
Orecchiette and rabe is the classic pugliese's pasta course
Tarallucci e vino is a great appetizer consisting of a very simple salty and spicy donuts great with wine
Cosciotto di capretto in creta; an ancient recipe with goat cooked on clay
Aleatico - (DOC) red
Moscato di Trani - (DOC) white
Apulia's cuisine is without rules, based on what can be found in the kitchen. Pugliese cuisine uses Apulian olive oil, one of the great products of the region. Apulia produces 65% of all the olive oil in Italy. Many wild vegetables like cicorielle, wild chicory, and lampascioni, a wild tassel hyacinth, are integrated in Apulia's cooking.
